Great side dish for roasted meats and poultry.
2 to 4 Tbl. Cucina Fresca Pesto Sauce
1/2 pound of gold, red or purple potatoes – cut in to bite-size
2 Tbl. oil
Preheat oven to 350 degrees.
Prepare your potatoes for roasting— wash, cut, toss in oil until well coated. Cook 45 minutes or until golden brown. Remove from pan, place into serving bowl. Add Pesto, as much or as little as you like. Garnish with shredded Parmesan cheese.
