Artisanal Cut Pasta

Cucina Fresca fresh pasta is made with only Semolina No. 1 flour (wheat) and fresh pasteurized eggs. Our pasta is then hand crafted by a process called lamination; the dough is kneaded, folded, rolled to thickness and then covered and set to rest for 1-2 hours before cutting. Allowing our pasta dough to rest allows for the gluten to relax, which makes for more tender pasta.
