I am a huge fan of keeping a recipes ingredients under 10 items but I love this soup so much I make an exception for this one. To really make it a comfort food day I make a Pesto Grilled Cheese to dunk in my soup.
2 jars Cucina Fresca Marinara Sauce
3 Tbl. olive oil
1 medium onion, diced
1 cup celery, diced
1 cup carrots, diced
4 cups stock (chicken or vegetable)
1 can kidney beans, drained and rinsed
1 bag frozen green beans
1 medium zucchini, diced
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. dried thyme
1 package Cucina Fresca Penne
salt and pepper to taste
Sweat onions, celery and carrots in olive oil over medium heat until soft, about 10 minutes. Add fresh Marinara, stock, kidney beans, green beans, zucchini, oregano, basil and thyme to pot. Simmer for 20 minutes. Add Penne and simmer until Penne is cooked, about 10 minutes.
Garnish with parmesan cheese.
