You should be able to make this soup with leftovers from your holiday meal. Some carrots, onions and celery. Heck, got some roasted sweet potatoes, green beans or even some gravy! Just toss them in the pot as well.
1 package Cucina Fresca Gnocchi
4 cups chicken stock
1 large onion, peeled and sliced
3 celery ribs, chopped
2 large carrots, peeled and sliced
1 bunch of fresh parsley, chopped
Salt and pepper to taste
1-2 cups leftover (cooked) turkey, chopped
-Any other vegetable leftovers
Place onion, celery, carrots, and parsley and chicken stock in soup pot. Bring to boil. Reduce to simmer and cook until vegetables are tender, about 20 minutes. Bring back up to boil and add gnocchi. Cook 4 minutes or until gnocchi are tender. Add chopped turkey.
