2 16 oz. jars Cucina Fresca Smoked Tomato Sauce
1/2 c. sherry wine vinegar
1 c. water
1 c. extra virgin olive oil
1 c. diced celery
1 c. diced yellow bell pepper
1 medium cucumber, peeled, seeded, diced
2 Tbsp. chopped parsley
Combine in blender Smoked Tomato Sauce, sherry wine vinegar, water and extra virgin olive oil. Puree until smooth. Put in large bowl and fold in diced vegetables and parsley.
If desired, add lump crab meat or shrimp.
Portion to bowls and garnish with diced vegetables.
Enjoy immediately or serve later, chilled.
